Vegan Oatmeal and Raisin Cookies | Recipe


Prep time:10 min, Cook time 10-15 min, Serves:

Ingredients:
225g (8oz) vegan butter
225g (8oz) plain flour
140g (5oz) brown sugar
1 banana
2tsp Vanilla extract
175g Rolled Oats
175g Raisins
(a little extra butter for greasing the tray)

Utensils:
Sales 
Mixing Bowl and spoon
2  Baking Trays
Greaseproof paper

Recipe:

  • Preheat Oven and 190℃ (180℃ fan)
  • Grease the trays with (vegan) butter and line with greaseproof paper
  • Soak raisins in water for 10 minutes (I usually leave them to soak until I need to add them)
  • Mash up the Banana until smooth almost liquid form (this is the vegan egg substitute)
  • In a bowl, mix butter and sugar and stir well until paste 
  • Sift in flour and Mix
  • Stir in the banana and vanilla extract
  • Drain the raisins from the bowl, place them on a kitchen towel or cloth and pat them down to remove excess moisture 
  • Add raisins and oats to bowl slowly, Stir in well for even distribution.
  • Use tablespoons to place cookie mix onto the trays, flatten out the mix instead of keeping it in balls on the tray, this will allow the cookies to cook better all the way through. 
  • Bake in the oven for 10 to 15 minutes or until golden brown
  • Check the cookies are baked properly using the knife or cocktail stick test. 
  • (Without burning yourself, I'd suggest gloves, a knife or other utensil) remove the cookies from the tray onto the cooling rack so they do not stick to the tray or paper whilst cooling. 
  • Once cool they are ready to store and eat within 3 to 4 days
